Architecture that Looks Good Enough to Eat

With the construction of a new butcher’s shop in Griesheim, Hesse, with a party service, snacks and retail sales, the client, Thiemo Hamm, set himself an ambitious goal: a sensible and commercial combination of a rationalised operation production with refrigeration tasks, a representative and social area and an attractive sales and snack area. The client also considered design accents to be important in the centre of a district characterised by typical commercial buildings. On the one hand, the building was required to be distinguished from the ‘cubist’ commercial development in close proximity to it; on the other hand, however, it was not intended to offend customers and citizens with a monumental, palatial ideology. Of course, the building costs were also required to be kept within economical limits.
In every respect, the planning concept for Thiemo Hamm and team of 65 employees was realised because the sales, snacks and party service for the delicious sausage and meat specialities is going as well as hoped for, while the operation production costs are kept within the low calculated limits from a business management point of view.

Because of the different functional focuses of the building, the client and the planner decided on a mixed construction according to the principle of Walter Gropius, an architect and founder of the Bauhaus group, that “form follows function”. The sales and office areas were executed as a solid two-storey building and the whole production and the supply area for the party service as an energy-saving sandwich panel construction.
While a massively inclined gable roof, which is turned by 90° on its main axis and is hipped at the front, was placed on the solid, two-storey sales and office area, the production area was deliberately given a differently shaped gable, a more inclined roof and a different colour. The classic red tiles of the solid roof are contrasted with the warm yellow of the sandwich panel roof, which is used as an advertising surface for the pink-coloured trademark of Hamm, the party professional.

The colour concept of the interior is also implemented on the facade of the solid section of the building, with turquoise wall edgings and construction panels in the same colour. The interior of the sales and snack area was designed in close co-operation with Haeku, the shop-building specialist.

The staircase is arranged between the production section and the sales area in such a way that it is accessible both to people from outside and as a working route between sales, office and production operation in a functional and time saving fashion.

As can clearly be seen in Illustration 7, the sandwich panel constructions of the roof and the facade of the production operation have to a large extent been connected directly to the solid staircase.

 


Production Section: Business Management to the Fore

Business management considerations played a key role in the decision for sandwich panel construction. The major part of the five production departments (Carving, Production, Hot and Cold Food, Vacuum Packing / Despatch) must continuously be refrigerated. For this reason, only a structure that was able to demonstrate a high level of energy conservation and air and steam insulation for the whole surface of the building came into consideration. There were also high requirements in accordance with the applicable EC guidelines for the meat industry and the hygiene safety of the components used.

The load bearing structure for the two-storey production area is a mixed construction made of steel with a solid intermediate ceiling. The light grey wall and the yellow roof panels (System ems Insulating Panels) with a system width of 1.176 mm (wall) and 1.000 (roof) are fastened to this load bearing structure. The ceiling has been hung below the massive intermediate ceiling in the production area with sandwich panels. The ‘crawling’ room between the solid ceiling and the ceiling hanging from it is used as an installation space for various supply pipes. It was possible to use the wall surfaces, which are up to 6 m high in the core area, for generous built-in shelving.
One of the significant advantages of these sandwich panels results from the polyurethane rigid foam fixed between two steel or aluminium facings. It offers the most effective thermal insulation of all insulating materials known to date. Eighty millimetre thick panels with a k value of 0.30 W/m²K have been used for the roof and walls. Another advantage is the connection technology of these panels, sealed against air and steam, which is achieved through a special tongue and groove formation. The physical construction quality of this building shell will guarantee Thiemo Hamm an outstandingly economical use of refrigeration energy.

Door Concept in the Refrigerator and Deep Freezing Area

The cost of refrigerating energy is four times higher than the cost of heating energy. Of course, for a meat processing operation, it is just as important to ensure the perfect quality of the chilled or frozen goods. There are also the requirements for fast and smooth processes in the case of consignment, traffic between the production departments and delivery. For these reasons, an optimal conception of the doors in the refrigerator and deep freeze was absolutely necessary.

Here, the client was able to rely on the experience of Ganz cold store construction completely. All revolving and sliding doors in the production area are high quality sandwich panel constructions in doors equipped with polyurethane rigid foam cores 60 to 140 mm thick (System ems Insulating Doors). The ceiling plates are made of steel or stainless steel and will satisfy the highest requirements for corrosion protection and hygiene conditions. Both revolving and sliding doors can be sealed on all sides because of a special sealing system. A fully matured and ergonomic hinge mechanism ensures simple, secure and energy saving operation.

Exact in the Cost Plan and the Commercial Expectation

The intensive pre-planning by Ganz Kühlhaus GmbH began with conceptual studies, which had already flowed into a design that had been agreed with the client and with different factories or suppliers in all points after a few weeks. The contractual building procedures, planning of execution and detail, building supervision and general implementation also lay within the area of responsibility of the cold store specialists. The client was able to officially open his new company building after seven months of construction activity. On the opening day, the client was particularly glad that the planned construction costs had not been exceeded at all. Following a year of successful operation Theimo Hamm was also finally convinced that the operating costs moved exactly within the planning framework.

And the most important benefit of the new building for the client is that customers like coming to it and in large numbers. Although this is certainly an affirmation of the quality of Hamm’s meat and sausage goods, it is also confirmation of the acceptance of a successful design and functional construction concept.
